Mixed veg and mixed curry menu 2 Recipes

I love vegetation and have prepared 2 separate meals and then mixed them..it helps thicken the veggie based one which didn’t have the curry in it.

In the event you guessed right they both recipes ended up with curry in them and thickened and ready to be eaten with whatever you like to eat it with e.g rice, bread …it’s up to you.

Curry mixed vegetables recipe


1/2 inch of raw carrot

2.4 inches of leek the deeper green part and the light green part

3.garlic and onion 2 gloves and 1/4 of an onion.

4. Black pepper thyme curry powder (i use either Madras or tesco brand)

5 1/2 potato

6.1 mushroom

7.1/2 inch parsnip

8.10z or small bit of cabbage

9.dollop of olive oil and also add water.


1. A saucepan

Method for preparing recipe

1. Place a small amount of water in bottom of saucepan and place it on the stove.

2. Peel and wash the potato, carrot, parsnip,& garlic and onion .

3. Dice the carrot.parsnip and potato and onion and garlic and place in water in saucepan

4. Add black pepper first then thyme and then curry powder.

5. Get the leek wash and cut length ways down the middle and dice or cut it up and place into cooking curry. Also, wash and add the 1 mushroom diced into the curry.

6. Add cut or diced cabbage of course wash cabbage before dicing and place in saucepan.

7. Add a dollop of olive oil to the center of curry meal which is cooking and also a bit of water and allow boiling

8. If you wish you can add tomato or a tomato paste to flavor, but you should have added enough thyme curry and black pepper and the parsnip and mush room gives flavor. Please ensure to give a good stir all the way through .

*While you are cooking the curry with mixed vegetables you should also have another meal that up are preparing at the same time called ‘Mixed vegetable recipe dish’. Veggie mixed vegetables recipe.

Preparing the recipe

1. Put small amount of water in saucepan and place on the stove

2. Peel and clean parsnips, carrots, onion and garlic and dice and add to water which is in saucepan on the stove.

3.Add black pepper and thyme and 1 mushroom wash first then dice.

4. Cut the leek down the center and dice and add to cooking veg.

5. Wash and Chop cabbage and add to cooking vegetable.

6. Add dollop of olive oil and a bit water and allow boiling. Stir all the way through.

As you see in the menu the leeks show especially the deep leaf part of the leek, the parsnips and carrots. You don’t need to add too much large amount as it seems to create quite a lovely meal. Before you join the 2 meals check who in your family or house doesn’t fancy curry on the day..then of course you can serve them separate and then what is remaining join them together… It still tastes yummy. Recall if you wish you may add tomato or other vegetables which ever ones you love.Also you can take out ones you don’t like ,even in my recipe…so be ok whatever you decide to do .

Recall the joining takes place after you find out who wants what and you may cook this with a bit of rice or use bread and dip in .
